Beef and apricot couscous

Ingredients

-200g couscous (organic)

-450ml chicken stock (organic), hot

-50g flaked almonds, toasted

-130g dried raisins

-salt

-pepper

-500g beef, cut into 2 inch cubes

-100ml olive oil

-50g ground almonds

-1 onion, diced

-2 garlic cloves, crushed

-175g dried apricots

-1tbsp honey

-300ml beef stock (organic)

-1 cinnamon stick

-2tsp ground cumin

-1/2tsp ground nutmeg

-3tbsp fresh mint, chopped

Instructions

1. Heat the olive oil in a large casserole dish over medium-high heat.

2. Season the beef, put it in the dish, and cook until golden brown.

3. Transfer the beef to a plate to reduce the heat.

4. Add the diced onion and garlic to the casserole dish and saute for 2-3 minutes until they start to soften.

5. Add 1tsp of ground cumin stick and the nutmeg to the dish and stir well.

6. Put the beef back into the dish and douse it with beef stock.

7. Add the apricots and cinnamon stick.

8. Bring everything to a boil.

9. Cover the dish and let it simmer for 45 minutes or until the beef is tender and falls apart easily.

10. Prepare the couscous by placing it in a large heatproof bowl.

11. Place the chicken stock into a saucepan over medium-high heat until it boils.

12. Add the raisins to the couscous and pour the chicken stock over it.

13. Cover the bowl holding the couscous with clingfilm and allow it to sit for 5-6 minutes to absorb the stock.

14. Remove the clingfilm and fluff the grains with a fork.

15. Once the 45 minutes are up for the beef, add honey, ground almonds, and 2 tablespoons of mint.

16. Combine the remaining ground spices in a small bowl.

17. Top the couscous with the beef stew when you are ready to eat it.

Additional tips

It is best to sprinkle the remaining mint and other spices on top of the dish just before you eat.
